Warm Char Siu Salad

Ingredients

Main Ingredients

400gPork Fillet
1Chinese lettuce (washed)
½ bunchBaby Spinach (washed)
1 bunchAsparagus (washed and cut into 3cm pieces, then blanched)
Chilli (seeded, cut into strips, as garnish)

Dressing

2 tbspDistilled Vinegar or Rice Vinegar
5 tbspExtra Virgin Olive Oil
½ tbspGarlic (minced)
1 stalkSpring Onion (finely chopped, plus extra for garnish)

Instructions

To Prep

Marinate port in Chinese BBQ Marinade for at least 2 hrs.

To Cook

1.Bake at 200°C on a rack over a baking tray filled with 2.5cm of water for 20 mins, or until cooked. Allow to rest and slice thinly.
2.Prepare salad and mix the dressing ingredients.
3.Top with the dressing and slices of warm char siu, then garnish with chilli slices and spring onions. Serve immediately.
