Somen Noodles with 3-Color Vegetable Salad


Main Ingredients:

1 packHakubaku Organic Somen
60 gcarrot (peeled and finely shredded)
150 gred bell pepper (finely shredded)
100 gsnow peas (finely shredded)
25 gchives (cut into 5 cm lengths)
15 gcoriander leaves

Dressing Ingredients:

60 mlfresh lime juice
1 tbspbrown sugar
2 tbspolive oil


1. In a large bowl whisk dressing ingredients together.
2. Cook Somen noodles as per packet instructions.
3. Add noodles, carrot, bell pepper, snow peas and chives to dressing, tossing to coat well.
4. Divide salad between plates. Scatter over coriander leaves and serve.
