Soba Noodle Salad with Quick Peanut Sesame Dressing

Ingredients

Main Ingredients

180 gHakubaku Organic Soba Noodles
Halfa bunch of radishes
1carrot (julienned)
¼small red cabbage (finely chopped)
½red bell pepper(finely chopped)
1 cupsnow peas (finely chopped)
Handful ofwatercress
2 tbspblack sesame seeds

Dressing Ingredients

⅓ cupwater
⅓ cup + 2 tbsppeanut butter
1 tbspmaple syrup
2 tspRice Wine Vinegar
2 tspfreshly grated ginger

Instructions

To Cook

1. Cook Soba Noodles in rapidly boiling water for 4 minutes, drain and refresh under cold water, and set aside.
2. Combine the dressing ingredients together in blender.
3. Combine the chopped vegetables and noodles in a bowl and stir to combine. Add your desired amount of dressing, divide among 3-4 small bowls and sprinkle over sesame seeds and watercress sprigs.
