Seafood Fried Rice with XO Sauce

3/4 cup ofrice (uncooked, cook according to package)
2 tbspoil
2beaten eggs
1 tbspchopped garlic
2 pcsdried shiitake mushroom (soaked & diced)
100 gfresh prawns (shelled, deveined & diced)
100 gfresh scallops (diced)
100 gasparagus
4 tspXO Sauce (as garnish)


1. Heat 1 tbsp oil in frying pan, pour eggs and scramble. Remove from pan when set and set aside.
2. Heat remaining oil and sauté garlic till fragrant. Add mushroom, prawns, scallops and asparagus. Stir fry until almost cooked.
3. Add in rice, eggs and Oyster Sauce. Stir fry until well combined. Portion and it is ready to eat with XO sauce as garnish.
