Korean Chicken Burger with Kimchi Slaw

Ingredients

Main Ingredients:

400 gchicken fillet (minced)
50 gfresh bread crumbs
1egg (lightly beaten)
85 gbrown onion (finely chopped)
2 tspgarlic (minced)
Cooking oil (for frying)
4hamburger buns, toasted
4 slices Gouda cheese (optional)

Kimchi Slaw Ingredients:

90 gred cabbage (finely shredded)
120 gcarrot (shredded)
80 g kimchi (sliced)
60 gspring onion (chopped)
2 tbspmayonnaise
2 tspsesame seed (toasted)
2 tspapple cider vinegar
2 tspfine sugar
salt and pepper to taste

Instructions

To Prep

1. Mix minced chicken, bread crumbs, egg, onion, garlic, sauce and sesame oil well in a big bowl. Set aside for at least 15 minutes, then shape into 4 round patties about 1 inch thick. Set aside.
2. Mix all the Kimchi Slaw ingredients in a bowl. Cover and refrigerate until ready to use.

To Cook

1. Heat a well oiled cast-iron skillet on medium-high heat. Cook meat patties for about 3 - 4 minutes or until browned, then flip over and cook the other side for 3 - 4 minutes or until done. Remove to a plate, cover and let rest for 5 minutes.
2. Place cheese if desired and cooked patty on the toasted bun. Top with kimchi slaw and serve.

Chef's tips:

Alternatively use meat as a filling for croissant or baguette. Simply omit breadcrumbs and stir fry meat instead.
