Cold Chicken Slices with Soba and Garlic Sauce

1 pack ofHakubaku Organic Soba (cooked & cooled)
300 gchicken fillets (trimmed and sliced thin)
2spring onions (angle thinly sliced)
1 tbspfresh ginger (grated)
2 tbsprice wine
2 tbspextra virgin olive oil
2cloves garlic
1 tspchili oil
1 tbspmirin
1 tspsugar
½ cupcoriander sprigs


1. Combine together the raw chicken slices, spring onions, ginger, rice wine and olive oil. Pre heat a grill pan and quickly grill on both sides until just cooked and spread out slices onto the four plates.
2. Present the cooked chilled noodles over the chicken slices.
3. Combine together the garlic, soy, mirin, sugar and chili oil. Toss in the noodles, coat well and place neatly onto the chicken slices. Garnish with the coriander sprigs.
