1. Combine together the raw chicken slices, spring onions, ginger, rice wine and olive oil. Pre heat a grill pan and quickly grill on both sides until just cooked and spread out slices onto the four plates.
2. Present the cooked chilled noodles over the chicken slices.
3. Combine together the garlic, soy, mirin, sugar and chili oil. Toss in the noodles, coat well and place neatly onto the chicken slices. Garnish with the coriander sprigs.
