Beef in Oyster Sauce with Soba Noodles

1 pack ofHakubaku Organic Soba
500 gBeef strips
50 gSnow peas
6Spring onion ( 2 cm pieces, cut diagonally)
2 tbspcooking oil
2 clovesGarlic (crushed)
1 tbspBrown sugar
400 gBok choy
250 gGai Lan


To Prep

1. Cook noodles according to packet instructions. Drain, then refresh under cold running water. Drain well, then set aside.
2. Break bok choy and gai lan into large pieces and steam until just tender.
3. Drain well, then set aside (keep warm).
4. Heat oil in a wok. Stir-fry garlic until fragrant, then add beef strips (in small batches) until browned and just cooked. Set aside.

To Cook

1. Add the snow peas, corn, onion, all the sauces and sugar to the wok and stir-fry until peas are crisp-tender.
2. Return beef and noodles to wok and stir-fry until heated through.
3. Place the steamed vegetables on a serving platter.
4. Ladle the beef and noodle stir-fry on top. Serve hot.
