Steamed Scallops with Black Bean Garlic Sauce

40 gbean vermicelli (soaked and drained)
400 gfresh scallops
14 ggarlic (minced)
1 tbspoil
2 tspShaoxing wine
30 gspring onion (chopped)
25 gred chilli (chopped)
1 tbspwater


To Cook

1. Mix softened bean vermicelli with soy sauce.
2. Portion seasoned vermicelli into 4 ramekins and place scallops on top. Drizzle black bean garlic sauce, water, sesame oil and shaoxing wine and cover with aluminum foil.
3. Steam scallops and vermicelli over high heat for 8 mins or until scallops are cooked.
4. Heat oil in saucepan, add garlic and sauté till golden and fragrant. Pour garlic oil over scallops and it is ready to serve.
